Diamond Rios Lemon Caper Chicken

4 chicken breasts, skinless, boneless
1 cup butter or solid margarine
1 cup dry, white wine
1/4 cup lemon juice
3 tablespoons drained capers
1 cup flour

Coat chicken in flour and brown in butter. Add wine, lemon juice and capers to pan. Simmer for 20 minutes over low-medium heat. Serve hot.

8    corn tortillas
4    boneless, skinless chicken breasts, broiled or baked and shredded
1/2 cup shredded lettuce
1/2 cup diced tomato 
      salsa
      fat free, spicy, black bean dip
      fat free sour cream

Charlie Daniels Diet Chili

1   pound lean ground beef
1   medium onion
2   16 ounce cans undrained tomatoes
1   15 ounce can undrained kidney beans
2   cups celery, sliced
1/2 cup green bell pepper, chopped
1/2 teaspoon garlic salt
      chili powder to taste
      salt to taste
1    bay leaf

Cook ground beef and onion together until meat is brown. Pour off fat and liquid from pot and discard. Add tomatoes, kidney beans, celery and bell pepper. Mix well. Ad bay leaf, bring mixture to boil, reduce heat. Cover and simmer for 1-2 hours. Serve hot.

Crumb Cake (thanks Gator Girl)
This one has made many a soldier's and sailor's day. It's suitable for shipping.
 
1 12oz. box of vanilla wafers
5 lg. eggs or 6 small
2 cups of sugar
2 sticks of butter
1/2 cup of milk
1 tsp. vanilla extract
1 7oz. container of shredded coconut
1 cup of pecans
1 tsp. almond extract (optional)

Cream butter and sugar. Add eggs beating after each egg is added. Add vanilla and almond extract, than alternate wafer crumbs and milk. Fold in coconut and nuts. 
Bake at 275 degrees for 2 hours.

Buttermilk Pound Cake

3 cups of sugar
1 cup of shortening
8 ounces of cream cheese
6 eggs
3 cups of self rising flour
1 tsp. Lemon extract
1 tsp. Orange extract

Cream shortening, sugar and cheese. Add eggs and beat well. Add flavorings, flour and mix well.
Bake at 350 degrees for about 45 minutes

Angel Food Cake

12 egg whites
1 tsp water
1/2 tsp almond flavoring
1 teaspoon cream at tartar
1 1/2 cup sugar
1 tsp vanilla flavoring
1 cup flour

Add salt and water to egg whites and beat until about half stiff. Add cream of tartar and beat until stiff. Beat in sugar, add flavors and fold in flour. Pour in ungreased tube pan. Bake at 325 for 40-50 minutes.

Date-Holiday filled bars

Mix together 3/4 cup self rising flour and 1 cup brown sugar. Stir in 1 3/4 cup rolled oats. Place half in pan, greased and floured. Spread with cool filling. Cover with rest of mixture.
Bake at  400 degrees for 25-30 minutes.

Ginger Bread

1/2 cup sugar
1/4 cup butter
1/4 cup shortening
1 well beaten egg
1 cup molasses
2 1/2 cup self rising flour
1 tsp. ginger
1/2 tsp cloves
1 tsp cinnamon
1 cup milk

Cream sugar, butter and shortening. Add egg, molasses and dry ingredients. Add milk and beat until smooth.
Bake at 350 degrees in shallow pan for 25-30 minutes.

Banana Bread

1 cup sugar
3 tbsp buttermilk
2 eggs
1 stick butter
1 cup mashed bananas
2 cups self rising flour

Combine sugar, butter, eggs and milk. Beat well. Add bananas and mix well. Add dry ingredients.
Bake at 350 degrees for about 25-30 minutes

Ice Box Fruit Cake
(This is for those who don't like fruitcake. It's really good!)

1 large box of vanilla wafers
1 can sweetened condensed milk
candied fruit
chopped nuts
1 tsp vanilla flavoring

Crush wafers to powder. Add milk and vanilla. Add fruit and nuts. Form into rolls and refrigerate until stiff enough to cut into cookies. Serve
